Cajun-flavored chicken tossed in a creamy melt-in-your-mouth sauce with pasta. Easy to make yet impressive in taste thanks to delicious sun-dried tomatoes.
Ingredients
- 1 ½ cups 5% Cooking Cream
- 4 tbsp Butter
- 6 tsp Cajun Mix
- 2 Chicken Breasts
- 4 Green Onions
- 400 g Penne Pasta
- ⅔ cup Sun-Dried Tomatoes
Directions
- Cook the pasta: Bring a pot of salted water to a boil over medium-high heat. Add pasta and cook for 10-12 minutes, stirring from time to time until pasta is cooked (al dente). Drain, and reserve. Save some cooking water for later.
- Meanwhile, prepare the ingredients: cut the chicken into cubes, Chop the sun-dried tomatoes, thinly slice the green onions.
- Cook the chicken: Toss chicken with Cajun seasoning (use less than quantity provided if sensitive to spicy food) in a bowl. Salt and pepper to taste.
- In a large skillet over medium heat, sauté chicken in butter for 5-7 minutes.
- Prepare the sauce: Reduce the heat to low and add green onion, cream, sun-dried tomatoes and some** salt and pepper** to taste. Heat for 2-3 minutes, stirring frequently, until warmed throughout.
- Serve: Add cooked pasta to the skillet and toss to coat with the sauce. Add reserved cooking water if more sauce is desired and toss well.
- Optional: serve with fresh cracked pepper.
